Here is the Snow White Carrot, Daucus carota. This is a white carrot that is a very hardy variety. They can get to 6 to 8 inches long and 1 inch wide. They are extra sweet in winter and fall months and have a slight softness to them very tender. We found these to be god for salads if you cut them into long thin strips. If you are growing them for seed the are a bi-annual which needs 2 years to produce seeds. Open pollinated 80 days.
