Snow White Carrot
Here is the Snow White Carrot, Daucus carota. This is a white carrot that is a very hardy variety. They can get to 6 to 8 inches long and 1 inch wide. They are extra sweet in winter and fall months and have a slight softness to them which make them very tender. We found these to be god for salads if you cut them into long thin strips. They also make a really good carrot juice as well! If you are growing them for seed, they are a bi-annual which needs 2 years to produce seeds. Open pollinated 80 days.
