Here is the Red Garnet Amaranth, Amaranthus cruentus. It originates from Peru and was used by the ancient Aztecs for centuries. Amaranth in general goes back over 8000 years in it's use. It is mostly grown as an ornamental plant but it is edible and can be eaten cooked or raw like a salad green. There are many species and some are grown for the grain itself but the Red Garnet Amaranth is mostly grown for its other edible parts mainly as microgreens.
