It is an annual herb in the celery family. Dill is grown widely in Eurasia, where its leaves and seeds are used as a herb or spice for flavoring food. Fresh and dried dill leaves (sometimes called "dill weed" or "dillweed" to distinguish it from dill seed) are widely used as herbs in Europe, Central Asia and throughout north america. Dill is best when used fresh, as it loses its flavor rapidly if dried. However, freeze-dried dill leaves retain their flavor relatively well for a few months. Plants get to 4 to 8 foot tall with fern like foliage. Open pollinated 51 to 94 days depending on the stage you want to harvest.
