Here is the Early Yellow Straightneck Squash, Cucurbita moschata. It is also known as the Yellow Summer Squash and is a traditional yellow variety that produces straight or hooked, smooth fruits about 6 to 8 inches long. Plants or vines get to around 10 feet long and produce up to 8 fruits or more depending on how often you pick them off. We find it best to harvest when immature at 6 inches long. Skins harden and seeds enlarge as the squash matures. We find this great in soups and stews and the seeds are great roasted! Open pollinated 60 to 80 days.
